About “Unleavened bread” in Hebrew

Matzo is the flat, unleavened bread eaten during Passover to commemorate the Israelites' hasty departure from Egypt, when there was no time for bread to rise. It is called lechem oni—the bread of affliction—and is central to the Passover seder. Matzo must be made in under 18 minutes from the moment water touches flour to prevent any leavening.
